Why go
The smell hits you before the stall does — a pungent, fermented funk that Changsha natives treat as perfume. Cubes of tofu are brined for days in a dark infusion of vegetables and herbs until they turn nearly black, then dropped into hot oil. Done right, the skin blisters into a crisp shell that shatters to reveal a custard-soft, almost molten interior.
The finish is pure Hunan: a ladle of chilli-garlic sauce spooned into the crack, topped with pickled mustard greens and a scatter of coriander. It is fiery, funky and addictive — the ideal fuel for a city whose nightlife runs loud and late.

How to eat it
The stall hands you each cube on a skewer or in a small paper boat with sauce already inside. Bite carefully — the centre holds scalding steam. Work through the heat with sips of soy milk or the local milk tea, and do not skip the pickled greens; their sourness is what balances the funk. Expect to pay ¥5–10 for a serving of four to six cubes.
Where to try it
The densest cluster of stalls is around Huangxing Road and Pozi Street in the old city centre, within sight of the IFS tower. The retro-themed superstore Wenheyou (文和友) rebuilt an entire 1980s Changsha neighbourhood inside and serves its famous black stinky tofu with hours-long queues at weekends — go mid-afternoon to skip them. For a calmer sit-down version, head to Huogongdian (火宫殿), the century-old temple-of-snacks complex where old Changsha nostalgia meets classic Hunan street food.
